When it's hot outside - go for a refreshing salad that is utterly delicious to eat, and, quick and easy to make.

Perfect on its own or as a side dish, this great sweet and savoury salad will brighten up your summer day.

Bonus: Watermelon is 96% water which helps you keep hydrated. Feta is packed with protein, which keeps you full for longer. A match made in heaven! 

Watermelon and feta salad

Ingredients:
4 cups ripe, cubed watermelon
1 cup cubed or crumbled feta
juice of 1 lime
½ small red onion, sliced paper thin
½ cup chopped fresh mint
2 tablespoons pine nuts

Directions:
Place the watermelon in a salad bowl.

Top with remaining ingredients and toss gently to combine. Sprinkle with pine nuts. Voila! Best served immediately.
